Cereálie a pseudocereálie významně přispívají k světové produkci potravin poskytujících pro lidskou výživu a zdraví potřebné nutriční složky. Jsou také významným zdrojem vlákniny. Diplomová práce se zabývá vlivem obsahu vlákniny na stravitelnost vybraných vzorků cereálií a pseudocereálií. V práci byly stanoveny hodnoty sušiny, popelovin, stravitelnosti a neutrálně-detergentní vlákniny. Stravitelnost byla stanovena in vitro s použitím inkubátoru Daisy po enzymové hydrolýze vzorků pepsinem, pankreatinem a kombinací těchto dvou enzymů. Závislost stravitelnosti na obsahu neutrálně-detergentní vlákniny byla vyhodnocena pomocí statistické analýzy. |

Cereals and pseudocereals significantly add value to the global production of food providing required nutritional ingredients for people's nourishment and health. They are also a significant source of dietary fiber. This master thesis examines the influence that dietary fiber has on the digestion of selected samples of cereals and pseudocereals. In this work dry matter, ashes, neutral-detergent dietary fibers and digestibility were designated values. Digestibility was specified in vitro using a Daisy incubator after the enzyme hydrolysis of samples of pepsin, pancreatine and combinations of these two enzymes. The dependence of digestibility on the amount of neutral-detergent dietary fiber was evaluated with the aid of statistical analysis. |
