Bakalářská práce byla zaměřena na charakteristiku mořských a sladkovodních řas. Jejím cílem bylo zabývat se charakteristikou polysacharidů z těchto řas, jejich strukturou, vlast-nostmi a možnostmi jejich získávání. Více pozornosti bylo věnováno struktuře a vlastnos-tem polysacharidů získaných z červených mořských řas agarům a karagenanům a z hnědých řas alginátům z důvodu jejich využití v potravinářském průmyslu. |

Bachelor thesis was focussed on characterization seaweed and freshwater algae. The aim was deal with characterization of these seaweed and freshwater algae, their structure, pro-perty and possibilities of their extraction. More attention was devoted structure and proper-ty red seaweed polysaccharides as agars and karagenans and brown seaweed polysacchari-des as alginate due to their utilization in food processing industry. |
