Teoretická část diplomové práce charakterizuje Miličku habešskou jako jednu z alternativních obilovin. Práce definuje chemické složení obilovin se zaměřením na miličku, její původ a botanickou charakteristikou. Praktická část je věnována analýze miličky samotné a jejím příměsím s pšeničnou moukou. V experimentální části byly stanoveny následující ukazatele: vlhkost, obsah popela, kyselost mouky, bílkoviny, škrob a hrubá vláknina. |
