Cílem diplomové práce bylo srovnat 16 odrůd jabloní ve vztahu k jejich antioxidačním vlastnostem. Konkrétně byl sledován obsah polyfenolů, flavonoidů a vlastní antioxidační aktivita. Výsledky byly doplněny o analýzy refraktometrické sušiny. Jako nejperspektiv-nější odrůdy s vysokou antioxidační aktivitou se jeví zejména 'Šampion', 'Rosana' a 'Rubinole'. |

The aim of this diploma thesis is to compare the antioxidant properties of 16 apple varieties. Specifically, polyphenols, flavonoids and antioxidant activity were monitored. The research was complemented by an analysis of soluble solid content matter. The results show that the most promising varieties with high antioxidant activity were "Šampion", "Rosana" and "Rubinole". |
