dc.description.abstract	V bakalářské práci je charakterizován akrylamid, procesní kontaminant a potenciální lidský karcinogen, a jeho vznik v potravinách během tepelné úpravy potravin. Také jsou popsány rizikové potraviny, u nichž se v průběhu tepelné přípravy předpokládá zvýšený obsah této látky, a možnosti snížení akrylamidu v těchto potravinách. Práce se věnuje i toxickým účinkům akrylamidu a shromažďuje doposud zjištěné informace ze studií provedených na zvířatech a lidech.

dc.description.abstract-translated	In the bachelor thesis an acrylamide, a process contaminant and potential human carcinogen, and its formation in foods during the thermal processing and preparation are characterized. Risk foods, with higher possibility of an increased content of the substance, and the options of acrylamide reduction in foods are also described. The toxic effects of acrylamide and information from studies conducted on animals and humans are given in the thesis too.
