Předložená diplomová práce se zabývá hodnocením vybraných druhů vín, z oblasti Morava, podoblasti Slovácké od sklizně až po chemický rozbor vybraných komponent ve víně. Odrůdová vína Sauvignon, Rulandské šedé, Ryzlink vlašský, Ryzlink rýnský, Muškát Moravský a červená vína Cabernet Sauvignon, Cabernet Moravia ročník 2011, Cabernet Moravia ročník 2012, Svatovavřinecké ročník 2011 a Svatovavřinecké ročník 2012 byla analyzována na obsah veškerých titrovatelných kyselin, polyfenolických látek, anthokyaninů a určení barevnosti u červených vín spektrálními metodami a HPLC. Dále práce obsahuje charakterizaci jednotlivých odrůd vín a jejich pěstitelské oblasti v ČR |

This thesis deals with evaluation of selected wines from wine region Moravia, subregion Slovácké from the harvest to the chemical analysis of selected components in wine. Varie-tal wine Sauvignon, Pinot Gris, Welschriesling, Weissel Riesling, Moravian Muscat a red Cabernet Sauvignon, Cabernet Moravia year 2011, Cabernet Moravia year 2012, Pinot Saint-Laurent year 2011 and Pinot Saint-Laurent 2012 were analyzed for all titrable acidity, polyphenol, anthocyanins and determination of color in red wines by spectral methods and HPLC. The work includes the characterization of varietal wines and their produstion areas in the Czech Republic. |
