V přírodě vytváří mikroorganizmy mikrobiální společenstva, jejichž diverzita je typická druhovou bohatostí a relativním zastoupením druhů. Cílem bakalářské práce bylo popsat metody, které lze použít ke studiu mikrobiální diverzity potravin. V současnosti se stále více využívají metody bez potřeby kultivace. Mikrobiální diverzita potravin rostlinného a živočišného původu se zásadně odlišuje. V praktické části byla zkoumána mikroflóra jedlého hmyzu a jedlého květu. Pro stanovení mikrobiální diverzity byly použity molekulární metody ARDRA a TGGE. Ve vzorcích jedlého hmyzu byla prokázána velká mikrobiální rozmanitost, zatímco jedlý květ měl mikroflóru znatelně chudší. |

Microorganisms in nature create microbial communities, whose diversity is typical of the species richness and relative abundance of species. The aim of the thesis was to describe the methods that can be used to study microbial diversity of food. Currently, noncultivation methods are increasingly used. Microbial diversity of foods of plant and animal origin are fundamentally different. In the practical part microflora of edible insects and edible flower was examined. Molecular methods ARDRA and TGGE were used to determine the microbial diversity. Varied microbial diversity was demonstrated in samples of the edible insects, while edible flower flora was significantly poorer. |
