dc.description.abstract	Bakalářská práce se v teoretické části zabývá problematikou dusičnanů v potravinách a ná-pojích jejich rizikovostí pro lidský organismus. Uvádí přehled metod běžně používaných pro laboratorní stanovení dusičnanů. Cílem práce bylo srovnat běžně využívanou metodu stano-vení dusičnanů s rychlou spektrofotometrickou metodou firmy HACH. Získané výsledky jsou statisticky vyhodnoceny a provedeno srovnání použitých metod z hlediska časové a finanční náročnosti.	cs

dc.description.abstract-translated	In the theoretical part of this bachelor paper, problems of nitrates contained in foodstuffs and of their hazard for the human organism are discussed. The methods usually used for lab determination of nitrates are enumerated. This paper aims at comparison between the nor-mally applied nitrates determination method and the rapid spectrophotometric one develo-ped by the HACH company. The results obtained have been statistically evaluated and both methods compared as to their time as well as financial demands.	en
