V teoretické části bakalářské práce je charakterizován pravý čaj, jeho druhy, složení a zpracování. Dále je popsán kofein, jeho vlastnosti a stanovení kofeinu metodou kapalinové chromatografie. Praktická část bakalářské práce se zabývá stanovením obsahu kofeinu z extraktů pravých čajů (černých, zelených, oolong, bílých) připravených běžným postupem, i jako ledové čaje, pomocí metody HPLC s UV detekcí. |

In the theoretical part there is a characterization of tea, types of tea, its composition and manufacturing process. Further there is described a caffeine, properties of caffeine and its determination using high presence liquid chromatography. The practical part deals with the caffeine determination from tea´s extracts (black, green, oolong, white) made with a classic procedure and as an ice tea, by HPLC method with UV detection. |
