dc.description.abstract	Diplomová práce se zabývá charakterizací barevnosti vín z oblasti Bzenec za použití spektrofotometrických a koloristických metod. Mimo samotnou charakteristiku a popis bílých a červených vín a jejich výroby, popisuje teoretická část révu vinnou, jakožto hlavní surovinu pro výrobu vína a také její chemické a fyzikální vlastnosti, mezi které se řadí již zmiňovaná barevnost. Barevnost vína je způsobena pigmenty a kopigmenty, které se nacházejí ve slupkách a v dužině révy vinné. V této práci jsou jednotlivé pigmenty charakterizovány, včetně jejich chemického složení. Experimentální část diplomové práce zahrnuje měření UV/VIS a kolorimetrii vybraných vzorků vína. Dále je provedena numerická modelace naměřených spekter UV/VIS a jejich následná analýza. V této části jsou naměřené výsledky zpracovány a prezentovány. Jako poslední částí experimentu je porovnání jednotlivých vzorků vzhledem k jejich statické odlišnosti pomocí metody ANOVA.

dc.description.abstract-translated	This diploma thesis investigates the colors of wines from the Bzenec area using spectrophotometric and colouristic methods. In addition to the characteristics and description of white and red wines and their production, theoretical part describes the vine as the main raw material for the wine production and also chemical and physical properties of vine which includes the color. The color is caused by pigments and copigment, found in the peel and pulp of vine. The individual pigments are characterized including their chemical composition. The experimental part of the diploma thesis provides the measurement of UV/ VIS and colorimetry of the selected samples of wines. Numerical modeling of the measured spectra UV/VIS and their subsequent analysis are also performed. In this part, the measured results are processed, also presented. The last part of the experiment is a comparison of the individual samples due their statistic differences using the ANOVA method.
