Tato bakalářská práce pracuje s pojmy ekologické zemědělství, ekofarma a biopotravina. Dále se zabývá stavbou a chemickým složením obilného zrna a popisem vybraných obilovin, které byly vypěstovány v ekologickém zemědělství. Praktická část je pak věnována stanovení základních chemických parametrů, jako jsou vlhkost, obsah popela, titrační kyselost a hmotnost tisíce zrn. |

This bachelor thesis defines the concepts of organic farming, ecofarm and organic food. It also deals with anatomy and chemical composition of cereal grain and description of selected cereals which were grown in organic farming. The practical part is devoted to determination of basic chemical parameters such as moisture, contain of ash, titratable acidity and weight of thousand grains. |
