Cílem této diplomové práce bylo sledovat obsah biogenních aminů ve vybraných vzorcích fermentovaných potravin živočišného původu získané z běžné obchodní sítě a sledovat jejich změny během chladírenského skladování. Obsah biogenních aminů byl monitorován bezprostředně po zakoupení a na konci doby minimální trvalivosti, resp. použitelnosti. Třetí odběrový termín byl volen tak, aby byl přibližně uprostřed výše zmíněných termínů. Ke stanovení biogenních aminů byla využita iontově-výměnná kapalinová chromatografie s fotometrickou detekcí. Při chladírenském skladování bylo zjištěno, že dochází k nárůstu koncentrace biogenních aminů a tato koncentrace byla vždy nejvyšší na konci doby minimální trvanlivosti, resp. použitelnosti. Nejvyšší obsah biogenních aminů byl zaznamenán u sýrů ementálského typu a sýru zrajících pod mazem, kde množství přesáhlo hodnoty 1000 mg kg-1. Taková množství již mohou představovat zdravotní riziko pro konzumenty. U sýrů s plísní na povrchu byly obsahy biogenních aminů nízké. |

The aim of this work was to observe content of biogenic amines in selected samples of fermented foods of animal origin obtained from common market and to monitor their changes during storage at 6°C. The content of biogenic amines was noted immediately after the purchase and at the end of the shelf-life. The third time of sampling was chosen to be approximately in the middle of the terms mentioned above. To determine the biogenic amines, ion exchange liquid chromatography with photometric detection was used. During the cold storage, increasing concentration of biogenic amines was detected. This concentra-tion was always higher than at the end of the shelf-life. The highest content of biogenic amines was recorded in Swiss cheeses and smear cheeses, in which the amount exceeded 1000 mg kg-1. Such concentrations may infer a health risk for consumers. Low content of biogenic amines was detected in cheeses with white mould on the surface. |
