dc.description.abstract Cieľom tejto práce bolo vyizolovať a stanoviť obsah vitamínu C v brokolici pri rôznych tepelných úpravách. Vitamín C bol stanovovaný v brokolici čerstvej, v brokolici varenej vo vode po dobu 10 a 15 minút a v brokolici parenej po dobu 10 a 15 minút. K stanoveniu vitamínu C bola použitá metóda HPLC-ECD. cs
