Experimentální práce byla zaměřena na sledování výtěžnosti u vybraných druhů zvěřiny. Konkrétně byla zjišťována výtěžnost u srnčí, jelení a mufloní zvěře a u zvěřiny divokých prasat. Zjišťována a vyhodnocována byla celková hmotnost, hmotnost daných partií (plece, kýta, hřbet, panenka), dále hmotnost kostí a kůže a také podíl odpadů. |

The experimental work was based on monitoring of the yield in selected types of venison. Specifically, the yield was detected in roebuck, deer and wild boars. There were identified and evaluated: total weight, weight of fleshy shares (shoulders, legs, back, neck, tenderloin), weight of bones, leather, venison trimmings (share of meaty ribs) and the proportion of notprocessable parts - waste. |
