Diplomová práce se zabývá celkovým obsahem polyfenolů a antioxidantů v netradičních druzích ovoce, konkrétně v plodech dřínu, jeřábu a bezu. Tyto uvedené druhy netradičního ovoce se vyznačují vysokým obsahem biologicky aktivních látek, především polyfenolů a antioxidantů. Teoretická část této diplomové práce se zabývá popisem daného ovoce, jeho botanickou charakteristikou, pěstováním, chemickým složením daného ovoce, popisem nejvýznamnějších odrůd a využitím ovoce v potravinářském průmyslu. V této části práce jsou podrobně rozebrány výše zmíněné netradiční druhy ovoce (dřín, jeřáb a bez). V praktické části jsou vyhodnoceny údaje o celkových polyfenolech a antioxidantech získané z laboratorní analýzy. Tyto získané údaje jsou dále zpracovány do přehledných grafů a konfrontovány s odbornou literaturou. |

This Thesis deals with the total Content of Polyphenols and Antioxidants in non-traditional Fruits, specifically in the Fruits of Cornelian cherry, Rowan, and Elderberry. These non-traditional types of the Fruit have a high Content of biologically active Compounds, especially Polyphenols and Antioxidants. The theoretical Part of this Thesis deals with the description of the Fruit, the botanical Characteristics, Cultivation, chemical Composition of Fruits, the Most important Cultivars of Fruit and their use in the food Industry. In this Part of the Work in detail above nontraditional Fruits (Cornelian cherry, Rowan and Elderberry) are discussed. In the practical Part the evaluated Data on total Polyphenols and Antioxidants derived from laboratory Analysis are presented. The Data obtained are further processed into Graphs and compared with the Literature. |
