Teoretická část této diplomové práce se zabývá charakteristikou červené řepy a vodnice, jejich pěstováním, chemickým složením a vlastnostmi. Jsou zde také popsány metody, které byly použity v praktické části. V praktické části byl stanoven obsah sušiny a refraktometrické sušiny, titrační kyselost a obsah hrubé vlákniny ve vzorcích vodnice a červené řepy. Dále byla zjišťována antioxidační aktivita a celkový obsah polyfenolů v čerstvých a skladovaných vzorcích červené řepy a vodnice. |

The theoretical part of the thesis deals with the characterization of beetroot and turnip, their cultivation, chemical composition and properties. The methods used in the practical part are also described. In the practical part the content of dry matter, soluble solids, titratable acidity and crude fiber in samples of beetroots and turnips were determined. Furthermore, the antioxidant activity and the total polyphenol content were determined in fresh and stored samples of beetroot and turnips. |
