dc.description.abstract	Diplomová práce se zabývá srovnáním obsahů biogenních aminů u bílých vín ze Slovácké vinařské podoblasti. V teoretické části byla popsána technologie výroby bílých vín, v druhé kapitole byly popsány mikroorganismy produkující biogenní aminy ve víně a obsahy biogenních aminů vyskytující se ve víně. Ve třetí kapitole byly popsány faktory, které ovlivňují produkci biogenních aminů ve víně. V praktické části diplomové práce bylo analyzováno 100 vzorků bílých vín od 10 různých vinařů ročníku 2012 a 2013. U vzorků byly stanoveny obsahy biogenních aminů a bylo změřeno pH. Vzorky vína byly mezi sebou porovnány a byly stanoveny možné faktory, které mohly obsah biogenních aminů ovlivnit.

dc.description.abstract-translated	The thesis deals with comparing the content of biogenic amines, for white wines from the wine region of Slovácko. The theoretical part describes the technology of white wines, in the second chapter were described microorganisms producing biogenic amines in wine and contents of biogenic amines occurring in wine. In the third chapter described factors that influence the production of biogenic amines in wine. In the practical part of the thesis analyzed 100 samples of white wines from 10 different vintners year 2012 and 2013. The samples were determined by the content of biogenic amines and the pH was measured. Wine samples were compared with each other and were determined possible factors that could influence the content of biogenic amines.
