V teoretické části diplomové práce je uvedena charakteristika cereálií, cereálních výrobků a jejich význam ve výživě. Rovněž je zde popsána vláknina - její definice, dělení, chemické složení, metody stanovení a taktéž význam ve výživě. Praktická část popisuje způsob stanovení vlákniny ve vybraných cereálních výrobcích enzymatickou a neutrálně detergentní metodou a srovnání těchto metod. |

Theoretical part of the thesis is focused on the characterization of cereals, cereal products and their importace in nutrition. This part also describes the dietary fibre - its defininition, division, chemical structure, methods of determination as well as the importance in nutrition. Practical part deals with the process of determination of dietary fibre in selected cereal products by using the enzymatic and the neutral detergent method and also the comparison of both. |
