Diplomová práce byla zaměřena na fosfáty a jejich používání v masném průmyslu při výrobě drůbežích masných výrobků. Byly zde popsány fosfáty, jako přídatné látky, využívané při výrobě drůbežích masných výrobků a charakterizovány jejich vlastnosti a účinky. Byla provedena analýza sortimentu drůbežích masných výrobků v prodejní síti v České republice a bylo zde sledováno využití jednotlivých fosfátů v recepturách u vybraných druhů drůbežích masných výrobků. |

The master thesis was focused on phosphates and the use in the meat industry in the production of poultry meat products. Phosphates were described here, as additives used in the production of poultry meat products and charakterized the properties and effects. It was analyzed range of poultry meat products in the sales network in the Czech Republic and there were monitored the use of individual phosphates in the recipes for selected types of poultry meat products. |
