dc.description.abstract	Tato bakalářská práce se zabývá antioxidanty, principem jejich fungování a stanovení. Dále zhodnocuje možnosti využití antioxidantů v nápojářském průmyslu. Zaměřuje se na používání kyseliny askorbové jako stabilizátoru při výrobě nápojů. Uvádí její využívání při výrobě ovocných a zeleninových šťáv, piva a vína. Dále popisuje některé používané metody stanovení kyseliny askorbové.	cs
